Born and raised in Tillsonburg, Ontario with a hard work ethic and love for wood and trees, it was only natural that David Schonberger would pursue carpentry as a profession. As a licensed carpenter, David grew tired of the everyday hustle and bustle of the job site. So, accompanied with his natural talent in working with his hands and a healthy supply of unique wood, David set out to share the natural beauty of wood with all he meets.

Using only local hardwoods, the Ottercreek Woodworks woodshop is a busy place full of vision, creation and of course sawdust. Each piece of wood that passes through the shop is carefully selected for grains, knots, and other character features. David now has his wood crafts all over the world!

Every species of tree has its voice as well as its feature. Standing tall, it creaks and twists in the wind, enriching the very fibres within itself. Raw beauty exists in the grains, knots, and bark as it grows year after year.

Ottercreek Woodworks is proud to use only local hardwoods found in the Carolinian Life Zone of Southwestern Ontario. All lumber is ethically sourced through urban removal, wind blow down, dead or diseased trees and sustainable logging practice.

Plus, we’ve partnered with Carolinian Canada Coalition to regenerate local fragile ecosystem for every board we sell. Together, we’re restoring healthy landscapes in Canada’s Carolinian Zone to create thriving, climate-smart ecosystems. Ottercreek Woodworks is committed to giving back to nature; going beyond sustainable practice to become a fully regenerative business, it is our goal to benefit the Earth in everything we do.

Rediscover nature at the award-winning From Tree to Table Experience while you gain knowledge about the trees of Ontario’s vast Carolinian Forest with woodworker David Schonberger on 2 acres of property. Gather around an open fire, sip on tea with freshly-foraged ingredients and engage your senses. Communicate with the roots of the forest as we discover fungal networks and reverence of the woodland ecosystem through smell, taste, touch and sight.

Enter the artisanal woodshop to create your own live-edge charcuterie board alongside David and choose your own piece of locally harvested lumber. Work with a variety of tools including David’s grandfather’s vintage handtools to shape your board. In addition to creating your own board in the woodshop, take home a handpicked selection of the local terroir including local artisan charcuterie, cheeses, preserves and more in our Bounty of the County gift package. You’ll have everything you need for your first charcuterie feast on your new board at home! Inside the woodshop, you’ll also explore Ottercreek Woodworks’ studio of handcrafted boards, personalize your work and learn how to use your new charcuterie board at home to enjoy with loved ones.
